What You'll Need
1 Large Tomato, seeded and diced
1 Small White or Red Onion, finely diced (optional)
10 Basil Leaves finely sliced (chiffonade)
¼ tsp. Salt
¼ tsp. Fresh Cracked Black Pepper
Garlic Cloves
2 Tbsp. Olive Oil
½ cup Freshly Grated Parmesan Reggiano
Instructions
Preheat broiler. Mix tomato, onion, basil and seasonings in a mixing bowl. Slice rolls on a bias. Place bread slices on baking sheet and bake in preheated oven for 2 minutes or until lightly toasted. Remove from oven and rub both sides of toasted bread with a fresh halved garlic clove and drizzle with olive oil. Sprinkle freshly grated parmesan over bread and place back in oven for an additional 2 minutes or until cheese begins to melt. Carefully remove from oven and transfer to serving plate. Spoon tomato mixture generously onto each slice and serve. NOTE: 2 rolls will make approximately 6-8 Bruschetta
